No-Bake Chocolate Oatmeal Delight Cookies ~ Recipe
If you are looking for a simple, quick chocolate oatmeal cookie recipe that doesn’t even need to bake in the oven, then you have come to the right place! These cookies are a classic in our household, I got the recipe from my mom and she used to make them when I was a kid! Now I get to make them for my kids lunches. But here’s the thing, they are so easy to make, your kids can make them themselves (maybe with some supervision from mom).
I love making these fudgy chocolatey cookies when I need something quick for school lunches the next day and I don’t want to spend a lot of time switching out batches of cookies as they bake in the oven.
I thought I would share one of our favourite lunch box cookie recipes, Chocolate Oatmeal Delight Cookies. My youngest two kids helped me make these yesterday and I was reminded how easy they are. They are also a gluten, nut and egg free option as long as you make sure the oats are certified gluten free.
They also happen to resemble a certain local animal excrement and therefore my son when he was 8 years old, decided to name them “Bear Plop cookies”. Regardless of what they look like, they are super yummy, chocolatey, goodness, especially accompanied by a glass of milk!
No-Bake Chocolate Oatmeal Cookies
2 cups sugar
6 tbsp cocoa
1/2 cup butter or margarine
1/2 cup milk
1/2 tsp vanilla
1 cup shredded unsweetened coconut
3 cups oatmeal (any type works but I used old fashioned rolled oats)
Melt butter in saucepan and then add sugar, cocoa and milk. Bring to a boil. Boil for about 1 1/2 minutes. Add vanilla. Remove from heat and stir in coconut and oats. Drop by teaspoonfuls onto wax paper; chill.
Makes 4 1/2 dozen.
I also wanted to add that these are a good cookie to make when you have to make something out of your food storage pantry. I’ve made them using rehydrated powdered milk and we usually have some butter or margarine tucked away in a freezer somewhere, or you could use peanut butter. All the rest is stuff we always have stored in bulk so this makes these cookies super versatile.
