Easy One-Skillet Pork Tenderloin with Honey Dijon Applesauce ~ Recipe

Don’t you just love an easy recipe that uses only one pan and is simply delectable? How about we add all that to the fact this recipe uses abundant fall harvest ingredients like apples and pork and fresh herbs? This recipe came about a little while ago when I was trying to come up with a new easy way to cook up a pork tenderloin. I usually use the same old garlic dijon recipe (which is super easy and yummy as well) but I was remembering back to when I was a kid.

When I was a kid, we had a small house on a large double lot in our small town and on our property there were a few very productive and abundant apple trees. They unfortunately weren’t very good eating apples but they were great apples for applesauce. Therefore, we always had applesauce in the fall. I remember when mom would fry up some pork chops we almost always had them with applesauce and it was delicious!

One-Skillet Pork Tenderloin with Honey Dijon Applesauce

Prep time: 10 minutes
Cook time: 1 hour
Serves: 4-6

Ingredients:

1 c. unsweetened applesauce
3 T. honey
2 T. sugar-free Dijon mustard
3 T. fresh rosemary leaves, chopped
Sea salt and black pepper, to taste
2 T. coconut oil
1½ lbs. pork tenderloin
3 medium firm apples, cored and chopped

Directions:

  1. Place oven rack in center position and pre-heat oven to 350°F.
  2. Combine applesauce, honey, Dijon mustard, and rosemary leaves in a small bowl and stir to combine. Season with salt and black pepper, to taste, and set aside.
  3. Heat coconut oil in a large oven-safe (cast iron is great for this!) skillet over medium heat. Generously season the pork roast with salt and black pepper, to taste. Cook until browned and evenly seared on all sides, approximately 5-10 minutes.
  4. Remove from heat and spread half of the applesauce mixture all over the top and sides of the pork. Arrange the chopped apples around the sides of the pork and place in the pre-heated oven.
  5. Roast for 20 minutes, then remove from oven and flip the pork. Brush with remaining applesauce mixture and return to the oven for another 20-25 minutes, or until the pork is cooked through.
  6. Remove from oven and cover loosely to rest for 5 minutes before serving. Enjoy!

Ingredients

  • 2 tbsp Dijon mustard sugar-free

  • 2 tbsp coconut oil 
  • 1 1/2 lbs pork tenderloin
  • 3 medium firm apples cored and chopped
  • Sea salt and black pepper to taste

Instructions
