Potato, Sausage, and Broccoli Breakfast Bake

Or maybe you want to make something special for your family for brunch when you have a little extra time in the morning or on the weekend? This potato, sausage, and broccoli breakfast bake is perfect for those mornings when you have a little more time and you want to warm up your belly and your home.
Using healthy ingredients like eggs and potatoes and broccoli starts your day off with a full warm belly and the cheese just adds to the warm goodness. If you don’t have sausage, you can easily substitute bacon and if you don’t have fresh broccoli, just use frozen.
Potato, Sausage, and Broccoli Breakfast Bake
Ingredients
- Non-stick cooking spray
- 1/2 lb bulk Italian sausage no casings
- 1 small red onion diced
- 1 large russet or Idaho potato diced
- 2 large eggs
- 3 tbsp whole milk
- 2 cups fresh broccoli diced
- 3/4 cup . sharp cheddar cheese shredded, divided
- 2 tbsp fresh chives finely chopped
- Sea salt and black pepper, to taste
Instructions
- 1. Preheatoven to 350°F and spray an 8 x 8-inch baking dish with some non-stick cookingspray.
- Set a large skillet over medium heat and add the sausage. Cook untilslightly browned, breaking up the sausage with a wooden spoon as it cooks,approximately 3-4 minutes.
- Addthe onion and potato and season with salt and black pepper, to taste. Cook,stirring occasionally, until the onion softens and the potatoes become goldenbrown, approximately 6-7 minutes.
- In the meantime, whisk the eggs and whole milk in a small bowl andseason with salt and black pepper, to taste. Add one-half cup cheddar cheese andstir to combine.
- Transfer the sausage-potato mixture into the prepared baking dish andstir in the diced broccoli. Spread into an even layer and pour the egg mixtureevenly over the top. Sprinkle remaining cheese across the top.
- Place in the pre-heated oven and bake until the eggs are set and thepotatoes are cooked through,, around 30-35 minutes.
- Remove from oven and cool for several minutes before slicing. Top withfresh chives and serve immediately. Enjoy!
