Goat Cheese Filled Cherry Tomatoes
Ingredients:
1/4 pound goat cheese
1/4 cup minced fresh basil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
24 cherry tomatoes
Directions:
In a bowl, add the cheese, basil, salt and pepper. Mix with a fork until well blended.
Slice the top off each cherry tomato. Use a small spoon and scoop out the pulp to make a hollow shell. Rinse the tomato shells in cool water.
Use a small spoon, scoop 1 teaspoon of the mixture and stuff into a tomato shell. Arrange tomatoes on a platter to serve.
